A full-canvas suit is tailored with canvas throughout the suit construction (from chest to bottom hem). It gives proper drape and structure to the wearer. Also, withstand more dry cleans and last longer than usual.
A half-canvas suit is tailored with canvas interlining only from the shoulder/ chest to the waist region. Unlike a fully-canvassed suit, it does not extend up to the hem. It gives sufficient structure and tapering to the suit but not as much as a fully-canvassed suit. However, people looking for lightweight and cheaper suits can choose this.
